Rediscover Stuffing

Each year, the turkey gets top billing on the Thanksgiving table, but what would this culinary star be without the stuffing? Dry bread, vegetables, herbs, and broth may seem humble, but as the bread soaks up juices and flavors, it becomes a moist, fluffy, and mouthwatering morsel. Don't stop here, however. Simply trying new variations on the basic ingredients can take your stuffing from delicious to unforgettable.

Changing or adding just one ingredient can put a delectable twist on an old family recipe. Use sourdough instead of regular white bread for a tangy bite, or try bread studded with garlic or olives for little bursts of richness. In addition to your chicken broth, add a little wine for fruity and floral undertones. Want to spice things up? Cumin, paprika, cinnamon, ginger, and even curry powder lend exotic fragrance and flavors. Toss a small handful of chopped hazelnuts or walnuts for some toasty crunchiness. Classic Corn Bread Sausage Stuffing

Makes about 4 cups

Ingredients:

  • 1/3c Onions, diced
  • 1/3c Celery, diced
  • ½c Apple, diced
  • 2T Butter
  • 1T Olive oil
  • ½ lb Ground pork sausage
  • 1T Fresh sage leaves, finely chopped
  • ¾c Chicken stock
  • ½t Salt
  • ½t Pepper
  • 3c Corn bread, roughly crumbled

Method:

  1. Heat butter and olive oil in medium skillet over medium-high heat, then sauté onions, celery and apple for 3 minutes.
  2. Add chicken stock, then simmer for 2 minutes.
  3. Mix sausage with sage, and ¼  teaspoon of salt and pepper, then cook in a separate medium skillet until thoroughly browned.
  4. In a medium bowl toss together sautéed onion mixture, sausage and corn bread.
  5. Place mixture in cavity of turkey, then cook the turkey as directed. Or, if you prefer cook the stuffing separately, place it in a greased baking dish and drizzle ¼ cup melted butter over the top, then bake at 375 degrees for 20 minutes.
